Jawari Pasta served with pumpkin soup





INGREDIENTS

  • Jawari Pasta- 200gr cooked
  • 2 tsp- olive oil
  • Tomato puree - 1 cup
  • Fresh Basil leaves - 5-6
  • Italian seasoning - 2 tsp
  • Chilli Flakes - 2tsp
  • Crushed garlic- 3tsp
  • Salt and pepper for seasoning

METHOD

Heat oil in a pan add crushed garlic, tomato puree and cook it for 5 minutes. Add the cooked jawari pasta and toss it well, add Italian seasoning, chilli flakes and toss it again. Season it with salt and pepper. Transfer it into your favourite dish and garnish it with fresh basil leaf's.



Pumpkin Soup

INGREDIENTS

  • Vegetable Stock - 2lt
  • Red pumpkin - 500gr roughly chopped
  • Onion - 1 medium sized roughly chopped
  • Fresh thyme leaves - 2tsp
  • Garlic - 4 cloves grated
  • Peppercorns - 1tsp
  • Coconut milk - 200 ml

METHOD

Heat veg stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered, and remove it from heat. Puree the soup in small batches (1 cup at a time) using a food processor or blender. Return to pan, and bring to a boil again for 5-10minutes. Add coconut milk for a creamy texture.


NUTRITIONAL TIP

Pumpkin is also a cold potency food and helps in soothing and replenishing the body from inside.
